This easy sausage egg and veggie breakfast casserole is the perfect egg bake for your next brunch or holiday party. It is an easy and delicious way to feed a crowd! This recipe has sausage, green pepper, tomato, eggs, and bread to create the best casserole I have had (and I have tried a lot!) This breakfast or brunch recipe is perfect for a large gathering and will definitely be a crowd-pleaser. Every year we host a huge Christmas Morning brunch. It continues to be my favorite part of Christmas! All of my aunts, cousins and their kids come together to celebrate and we look forward to all the food we get to eat! My dad spent years making scrambled eggs for the whole crowd but as we continued to add to the family, it got harder to serve up that many eggs. He still makes them (he makes the best!) but we have other food there as well since we have about 30 people now eating brunch.
This egg casserole has the perfect texture and simple ingredients so everyone loves it. I prefer sausage in mine, but you certainly could use ham or bacon if that makes you happier! We make a TON of food (sausage, bacon, eggs, bagels, cinnamon rolls, biscuits and gravy, lox, fruit, and probably more) so this one 9x13 is plenty for everyone who wants some to have small piece.

It’s better to cook at a lower heat for the full hour, but depending on your oven the timing might be a little off. You need to keep an eye on it for your oven specifically!
Make sure the middle is fully cooked before you remove it from the oven!
It’s easy to prep the ingredients the night before, so I usually cook the sausage, dice the green pepper, and dice the tomato up. I also cut up the bread and store it in a plastic bag so I can throw everything together in the morning!
You can whisk up the eggs the night before too, just make sure you give them another whisk before you pour them into the dish.
The Best Easy Sausag, Egg, and Veggie Casserole Recipe
Makes: About 10-15 Servings
- 1/2 Loaf French Bread
- 1 lb Breakfast Sausage
- 2 Cups Mexican Cheese
- 1 Green Pepper, diced
- 1 Roma Tomato,diced
- 18 Eggs
- 1 ¼ Cup Milk
- Salt & Pepper
- Preheat Oven to 375.
- In a medium skillet, cook sausage until fully browned. About 10 minutes.
- While the sausage is cooking, slice and cut French bread into 1 inch pieces.
- Dice up green pepper and tomato.
- Spray a 9x13 glass dish with cooking spray and line the bottom with the French bread. Top with green pepper, tomato, and sausage.
- In a large bowl, whisk eggs and milk. Stir in 1 ½ cup of cheese. Pour into the baking dish.
- Sprinkle a little salt and pepper over the top along with the remaining Mexican cheese.
- Bake at 375 for about 1 hour, or until fully cooked through and the eggs have fully hardened.
