I have started my healthy eating quest. I've been putting it off, but now that I'm 8.5 months post-baby it is absolutely time! I'm working on focusing on real, whole foods and somewhat following the paleo/whole30 principals. But I don't like to do anything extreme. So, technically this recipe would be categorized as paleo-ish or whole30-ish but easily made to be strictly paleo or strictly whole30! Does anyone feel this way too? To many rules can backfire? I’m not sure. I think if you take the main ideas from all the “diets” out there you’re going to make your way to a healthier life. Eat more veggies and real foods, less processed foods, good quality meat and healthy fats, and you’ll be just fine (in my non-licensed non-certified opinion hehe).
I don’t know about you, but I like to enjoy my food and enjoy cooking it. Sometimes this means bending those rules and doing what is best for me. I refuse to sacrifice flavor, taste, or satiety. I’m not going to eat boring food just because it’s healthy, I’m sorry! I like to eat with a purpose, but one of those purposes is to ENJOY what I’m eating. Like, I know that corn isn't the healthiest thing I can eat, but it gives this dish such a good flavor and texture. I know it's better than me eating a bagel or fries, so it's a step in the right direction. I'm all about small steps in the forward :)
I can’t take full credit for the originality of this recipe, I but saw something sort of similar on one of those Facebook videos and was inspired! It calls for such easy ingredients, you might already have most of them in your pantry! I also think that this would be a ton of fun to play around with. You could try making a Cajun seasoning for it! The hubs feels the same way. Don't worry, I will share any variations that we come up with!

Tips for making this Paleo Chicken & Avocado Salad:
Cook chicken and bacon (and corn if you’re adding it) a few days ahead. If you are a meal prep guru, you probably will do this anyway. But if you aren’t and want to bring this lunch to work with you, it’s so easy to throw everything in a bowl if the meat is prepped in advance!
I like to use fresh corn on the cob, but if it’s not in season, canned will work just fine. I usually pour the entire can and simmer on low for about 10 minutes to prepare.
Corn is not a Paleo Ingredient…so omit it if you are strictly Paleo :)
You can cook chicken and bacon in the same skillet if you want to only use one pan vs 2!
You probably have everything you need but just in case, here is a list to make sure!
Chicken & Avocado Salad with Lemon Dressing
Makes: 2-3 Servings
- 1 lb Ground Chicken
- Salt & Pepper to Taste
- Italian Seasoning to Taste
- 1 Avocado
- 2 Ears Corn on the Cob
- 2 Tbsp Green Onion
- 6 Slices of Bacon
- Juice of 1 Lemon
- 2 Tbsp Extra Virgin Olive Oil
- Heat a skillet over medium heat and add chicken. Season with salt, pepper, and Italian Seasoning. Cook chicken until no longer pink, about 7 minutes. Remove from pan and place in a large bowl.
- While chicken cooks, cook bacon in a separate skillet. Let cool and then crumble.
- While the chicken cooks, boil water. Once water is boiling, add corn and cover. Let water return to a boil, then turn off heat. Let sit for 5 minutes.
- Once corn is cooked, cut of kernels and add to a large bowl.
- Mix lemon juice and 2 Tbsp of Olive Oil in a small dish.
- Add chicken, diced avocado, corn, green onion, and crumbled bacon in a large bowl. Cover in dressing, to your taste.
- Put cast-iron pan into the oven and bake for about 7 minutes, until the top is golden brown.
- Mix together and Enjoy!
